Can we afford to eat so much red meat?

If you caught Larry King’s discussion, you know he was asking the qustion “Should Americans banish the burger?”

I was impressed with Mark Bittman’s argument in Food Matters on reducing the amount of red meat that you consume and Jane Goodall in Harvest of Hope argues that raising beef that’s fed by massive quantities of corn that draws down on water supplies is extravagant.

In a final message from his post at Gourmet magazine, Barry Estabrook writes about the “Conscientious Carnivore,” describing more sustainable beef ranching techniques.
